Homemade Chili is one of those great one pot dishes that can be made in advance and only gets better as the flavours meld. It truly is comfort in a bowl. Make a large batch and then freeze leftovers in 2 serving portions for a quick meal on a busy night.
- 4 medium onions, small dice
- 2 green peppers, small dice
- 2 jalapeno, small dice (optional)
- 2 cloves garlic, chopped
- 2 lbs lean ground beef, turkey or bison
- 2 cans diced tomatoes
- 1 jar tomato sauce (plain)
- 1 1/2 Tbsp chili powder
- 2 tsp salt
- 2 cans red kidney beans
Makes 10 servings
Sauté onion, peppers and garlic in some olive oil just until softened, remove from pan. Using same pan add meat and brown over high heat. Drain any fat.
Return vegetables to pot with remaining ingredients except beans. Heat until boiling then reduce to a simmer. Cook uncovered for about 1 hr and 15 min. Add beans in last 15 minutes before the end of cooking.
